Technical Specifications
The spirit is made from a blend of heritage apples from the state of Virginia. The technical process begins with the fermentation of the fruit must (cider), which then undergoes on-site distillation. The resulting liquid is aged in select oak barrels, where it interacts with the wood to stabilize its volatile compounds, acquiring its characteristic amber hue and developing molecular notes associated with natural tannins and the sugars of caramelized fruit.
